Broccoli Cheddar Egg Bites

Ingredients

  • 6 eggs
  • 1 cup cheddar cheese
  • 3/4 cup cottage cheese
  • 3/4 cup plain full fat yogurt
  • 1/2 cup broccoli (finely chopped in food processor)
  • 1/4 cup of chopped broccoli florets (this will be used to put on top of egg bites)

Directions

  • Add eggs, cheddar cheese, cottage cheese, yogurt, and salt to a blender. Blend ingredients together for 30 seconds.
  • Grease muffin tin coconut oil. Sprinkle the finely chopped broccoli in the bottom of each cup. Fill each cup about 3/4 of the way full with egg mixture. Finish topping with a few small broccoli florets on the top of each egg bite. 
  • Cook at 375 degrees for 20 minutes.  Once finished, let cool. 

Notes

These can be refrigerated for up to 1 week or stored in the freezer
