Chickpea Cookie Dough Bites

Ingredients

  • 1 15 oz. can chickpeas (drained and rinsed)
  • 1/4 cup smooth peanut butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 tablespoons of coconut sugar
  • pinch of sea salt
  • 1/4 cup dark chocolate chips
  • 1/4 cup of cacao nibs

Directions

  1. Add chickpeas, peanut butter, maple syrup, vanilla extract, coconut sugar, and sea salt to a food processor and mix well. 
  2. Fold in 1/4 cup chocolate chips and 1/4 cocoa nibs
  3. Roll the cookie dough into 2 inch balls
  4. Place cookie dough on a wax paper lined baking sheet.
  5. Place in freezer for 20 minutes to set. Enjoy!

Notes

These do best when stored in the freezer.
