Fermented Carrot Sticks


Prep Notes

You will need Quart Size Mason Jar.

Fermenting Airlock System. Can be purchased on Amazon.

Ingredients

5 to 7 large carrots, peeled and cut into sticks

1-2 small clove of garlic, peeled. Slicing is optional

3 to 4 sprigs of fresh dill

1 Tablespoon of unrefined sea salt

2 cups of filtered water

Directions

In a measuring cup, mix together filtered water and sea salt to make brine; set aside.

Stack and arrange carrot sticks in jar.   

Place garlic and dill in -between the carrot sticks in the jar.

Slowly pour the brine into jar over top of carrots.  Leave 1 inch of space from the top due to expansion from culturing.

Please the lid with air-lock on the jar tightly.  Fill air-lock with filtered water to the fill line.

Let ferment, at room temperature, for 5-7 days.

Remove air-lock system and replace with storage lid.  Transfer to refrigerator and enjoy!
