1 pound fresh green beans (not frozen)
1-2 small clove of garlic, peeled and thinlysliced
Pinch crushed red pepper flakes
3 to 5 sprigs of fresh dill
1 ½ Tablespoons of unrefined sea salt
2 cups of filtered water
Snap off stems from the end of green beans. Blanch them in boiling water for 2 minutes. Immediately transfer to bowl of ice water and keep there until no longer hot. Typically 5 minutes. Drain the green beans and dry.
Add green beans to quart jar, stem-end down. Pack them in close together. Tuck dill in between green beans; add in garlic and pepper flakes. Peppercorn is optional
In measuring cup, mix together filtered water And sea salt to make brine. Pour over top of green beans. Leave 1 inch gap from the top due to expansion from the ferment. If you need more brine to cover, make additional brine using the same ratio.
Please the lid with air-lock on the jar. Fill air-lock with filtered water to the fill line.
Let ferment, at room temperature, for 3 days.
Remove air-lock system and replace with storage lid. Transfer to refrigerator and enjoy!
